Dal is a healthy vegan classic, providing much our daily needed nutrition. This is a our flavorsome, yet easy-to prepare version.
1 cup yellow split lentils
3 cups water
1 small onion
1 large carrot
5 cloves garlic
1/2 table spoon salt
1/2 table spoon pepper
1/2 table spoon cumin
1/2 table spoon curry powder
1/2 table spoon grounded corriander
1/2 table spoon oregano
Dice the carrot and onion into small pieces.
Put a little olive or sunflower oil in the pan.
Add the carrots and onions, along with the garlic, salt, ground cumin, coriander and curry powder.
Stir gently for around 6 minutes until it becomes a paste (the carrots will still be raw – don’t worry)
Add the lentils and water and stir
Add the pepper and oregano
Bring to the boil and simmer for 20 minutes until the lentils are soft (stir every 5 minutes)
Taste & add salt and pepper if needed.
Serve over rice. Bon Appetit!
